Hummus

Ingredients:
4 cups cooked garbanzo beans, cooking liquid reserved (or canned beans, drained - liquid reserved)
2 tablespoons sesame tahini, salt-free
1 tablespoon extra-virgin olive oil
3 tablespoons lemon juice, fresh squeezed
2 teaspoons garlic, minced
1/4 cup reserved cooking liquid, more if needed
 
Directions:
In food processor, blend garbanzo beans with cooking liquid until smooth.
 
Mix tahini and olive oil in separate bowl, drizzle into food processor as beans are being processed. Add lemon juice. Add garlic Add more cooking liquid if needed to obtain a smooth, creamy texture.
 
Add more lemon juice and/or garlic to taste. Scrape from food processor onto serving plates.  Sprinkle with paprika. Serve with vegetable sticks.
 
Yield: Approx 4 cups.  Serving size: 2/3 cup (6 servings total).
