Join The Rosati's For A Dream Trip To Italy
 

We invite you to join the Rosati's on a dream trip to Italy, November 20th to 27th. You will be picked up at Fiumicino, Rome's airport and transported to Locanda Rosati, a country inn just outside of the idyllic town of Ovieto, about halfway between Rome and Florence. We will enjoy La Dolce Vita, the Italian lifestyle, with breakfast and dinner at the Locanda, where 80 percent of the food is organically grown on their farm and our very low sodium cuisine requests are deliciously prepared.
 


To our knowledge, this is the only cardiologist and dietitian led Italian tour available, where you will enjoy what many consider the best "local" food and wine in the world -- and actually return home healthier! Leisurely daily outings will include visits to a local winery for lunch and a wine tasting, a visit to a local frantoio (where olives are being pressed to make olive oil), the magnificent towns of Assisi, Civita di Bagnoreggio, Orvieto and a local spa or Montalcino. We will also visit a sheep farm and assist in making and consuming the best Pecorino cheese (from sheep's milk) you've ever tasted.
 
Sunday, November 27th, we will return to Fiumicino. The cost of the trip including transportation in Italy, lodging, all breakfasts and dinners, and all but 3 lunches, guides and two cooking classes at the Locanda, is expected to be around $3,000 per person. The final cost will depend on the number of participants and the exchange rate closer to the time of the trip.

Recipe: Rice House Tabouli 
 
Ingredients:
2 1/4 cups water
1 cup bulgur wheat
2 tomatoes, seeded and finely chopped
2 green onions, sliced into thin slivers
1 cup coarsely chopped fresh parsley
2 cloves garlic, minced, or to taste
2 lemons, juiced
2 tablespoons olive oil
1 teaspoon ground cumin
1/2 teaspoon freshly cracked pepper
 
Directions:
Bring water to a boil in a saucepan, turn off the heat, and stir in the bulgur wheat. Cover and let sit for 30 minutes to absorb water. Strain off any liquid left unabsorbed, if necessary.
Place the bulgur wheat in a large salad bowl, and lightly toss with the tomatoes, green onions, parsley, garlic, lemon juice, olive oil, cumin and pepper until thoroughly combined. Refrigerate the salad for at least 3 hours to blend the flavors; serve cold.
 
Yield: 6 Servings.
 
Each serving contains approximately: Calories 128, Fat 5g, Saturated fat 1g, Cholesterol 0mg, Carbohydrate 19g, Fiber 5g, Sodium 26mg, Protein 3g
.
Recipe: Rice House Hummus
 
Ingredients:
4 cups cooked garbanzo beans, cooking liquid reserved (or canned b eans, drained – liquid reserved)
2 T sesame tahini, no added salt
1 T extra-virgin olive oil
3 T lemon juice, fresh squeezed
2 tsp garlic, minced
1/4 cup reserved cooking liquid, more if needed
 
Directions:
In food processor, blend garbanzo beans with cooking liquid until smooth. Mix tahini and olive oil in separate bowl, drizzle into food processor as beans are being processed. Add lemon juice. Add garlic. Add more cooking liquid if needed to obtain a smooth, creamy texture. Add more lemon juice and/or garlic to taste. Scrape from food processor onto serving plates. Sprinkle with paprika. Serve with vegetab le sticks.
 
Yield: Approx 4 cups. Serving size: 2/3 cup (6 servings total).
 
Each serving contains approximately: Calories 248, Fat 9.7g, Saturated fat 1.3g, Cholesterol 0mg, Carbohydrate 31.3g, Fiber 8.8g, Sodium 11.4mg, Protein 10.6g.
