Black Bean Burgers with Mango Salsa

Burger Ingredients:
6 cups cooked black beans
1 tablespoon extra virgin olive oil
1 red bell pepper, seeded, medium diced
1 green bell pepper, seed, medium diced
1/2 large onion, peeled, medium diced
2 teaspoons cumin
2 tablespoons fresh cilantro, chopped
1 1/2 cup Panko bread crumbs (Japanese brad crumbs, no salt added)
1 tablespoon fresh garlic, minced

Divide beans into two equal portions and puree 3 cups. In a hot skillet, saute peppers, onion, and 1 teaspoon of cumin in olive oil. In a large bowl, mix whole beans, sauteed vegetables, pureed beans, remaining cumin, and cilantro. Add Panko bread crumbs and form into patties. Bake patties in 350 degree oven for 10-15 minutes. (These patties will also freeze well if not baked right away!)

Salsa Ingredients:
1/2 red onion
1/2 red bell pepper
1/2 green bell pepper
2 mangos, peeled and diced
1 teaspoon fresh garlic, minced
1 tablespoon fresh cilantro
Juice of 1 whole lime (or more, to taste)
1 tablespoon honey
1 tablespoon extra virgin olive oil

Mix all chopped ingredients well and chill until time to use. Top burger with salsa and place on a bed of lettuce.

Yield: 6 servings; serving size 1 patty and 1/6 of the salsa.:
