Salmon with Mango Coulis

Fish Ingredients:
1 lb. salmon filets
(approximately 4 - 4 oz. filets)
4 tbsp. garlic, minced
1 tbsp. olive oil
1/2 cup cilantro, chopped
Directions: Coat fish with the garlic and cilantro. In a hot pan, add olive oil and fish. Pan sear fish on one side, then bake in a 350 degree F oven for about 10 minutes (5 in a convection oven).
Yield: 4 Servings of fish
Coulis Ingredients:
3 mangos
1/2 pineapple, peeled and cored
1/4 cup lemon juice
1 1/2 cups pineapple juice
Directions: Dice mango and pineapple into 1 inch cubes. Place half of the fruit into a food processor or blender and puree. Place all other ingredients in a medium sauce pan over low heat. Add pureed fruit to sauce pan and bring to a simmer until reduced by half, approximately 1 hour. Serve about 1 tablespoon of the coulis over each piece of fish.
Yield: 16 servings
Make the coulis and freeze 3/4 of it for the next three times that this dish is prepared (only 1/4 of the recipe is needed). If you do not wish to freeze some for future use, simply make 1/4 of the recipe (using 1/4 of the amount of each ingredient).
